3/4 teaspoon anise seed, crushed
1/8 teaspoon hot red pepper flakes
1/2 teaspoon paprika
1/2 teaspoon onion flakes
1 teaspoon kosher salt (optional)
Begin by removing all fat from the meat. Then, cut the meat into cubes and put them into a food processor
and grind to desired consistency. Add the remaining ingredients and mix until well blended. You can put the
sausage mix in casings, but it can also be broiled or used to make delicious patties.
